By the end of 1979, El Pollo Loco had grown to 85 restaurants in 20 cities throughout Northern Mexico. Founder Pancho had won over the taste buds of his native country, but he had even bigger dreams northward. In 1980, the first El Pollo Loco in the United States opened its doors in Los Angeles, California, conquering palates with its new and unique flavor.
When Pancho moved from Mexico to the United States, he quickly discovered that Americans did not have easy access to quality Mexican food. Being a passionate cook, a warm-hearted host and a gifted entrepreneur, Pancho devoted himself to changing that. He combined his proud Mexican heritage and incomparable culinary talent to open Taco Palenque – a quick-service concept serving up authentic Mexican flavors. It became a hit in South Texas. But Pancho didn’t stop there. In 2005, he and his son Carlos opened Palenque Grill, a full-service Mexican restaurant with a fine dining twist, serving up elevated dishes like no other.
